75g (3oz) plain flour
2 tbsp cornflour
pinch of salt
200ml (7fl oz) ice cold sparkling water
1 red pepper, deseeded and cut into strips
200g (7oz) unpeeled sweet potato, cut into chips
1 medium courgette, cut into chips
4 tbsp vegetable oil for deep frying
