Ingredients

2 tsp rapeseed oil
1 onion, finely chopped
1 green pepper, finely chopped
2 large carrots, roughly chopped
1cm piece ginger, peeled and finely chopped
2 large potatoes, roughly chopped
1–2 fresh green chilies, deseeded and finely chopped (½ chilli = mild, 1 = medium, 2 = warm)
bunch fresh coriander, finely chopped
500g fresh spinach
500ml vegetable stock
1 tsp cumin
1 tsp ground coriander
1 tsp turmeric
1 tsp ground fenugreek
1 tsp smoked paprika
1 tsp garam masala
or, use 1 tbsp Tandoori curry powder
